Mississippi Mud Pie is a chocolaty dessert that has a chocolaty crust and a chocolaty sauce on top. There are so many variations of this delicious dessert from pies, cakes, cheesecakes, and bars! Bars are great for outings, potlucks, parties, and great to make at the house with family and/or friends.
  • 2 boxes of Ghirardelli Double Chocolate Brownie Mix
  • 1 cup chopped pecans
  • 2 cups mini-marshmallows
  • 1 package (16 oz.) powdered sugar (or 3 ¾ cups of un-sifted powdered sugar)
  • ½ cup whole milk
  • ¼ cup butter, softened
  • ⅓ cup Ghirardelli – 100% Unsweetened Cocoa
  1. Preheat oven according to the box instructions. Prepare 13x9x2-inch baking pan by lightly greasing or spraying with non-stick baking spray.
  2. Prepare brownie mixes, together in one bowl, according to directions on the box.
  3. Mix in 1 cup of chopped pecans.
  4. Bake according to directions on box. Note that since you doubled the recipe, you will need to add extra cooking time. (Note: If no instructions, check the brownies with a toothpick initially after 35 minutes, then every 2 minutes or so until a toothpick inserted comes out clean. For example, it was 43 minutes for me.)
  5. While brownies are baking, prepare chocolate frosting (see below).
  6. When brownies are bake to your liking, remove from oven and top with mini-marshmallows.
  7. Return to oven and bake an additional five minutes to melt marshmallows, but make sure they do not burn!
  8. Remove from oven and drizzle with frosting immediately.
  9. Cool completely before cutting into squares.
  10. For Frosting
  11. Beat all ingredients at medium speed with electric mixer until smooth.
  12. Microwave for 30 seconds and stir.
  13. Drizzle chocolate frosting over warm brownies and mini-marshmallows.
  14. Cool completely before cutting into squares.
